Cauliflower Parmesan Recipe
Ingredients:
- 1 head of cauliflower, cut into 2" florets
- 2 cans tomato sauce
- 8 slices mozzarella cheese, torn into pieces
- 8 oz grated Parmesan cheese
- 1 cup flour
- Bread crumbs (about 1 cup)
- Olive oil (more or less, for frying)
- 3 cups Parmesan cheese, grated
Instructions:
- Preheat your oven to 400°F (200°C).
- Prepare a 9x13-inch baking pan.
- Roll cauliflower pieces in flour, then dip in egg, and coat with bread crumbs.
- Fill a frying pan with ½ inch of olive oil and heat over medium-high heat.
- Fry cauliflower in batches until golden brown. Place on paper towels to drain excess oil.
- Spoon a thin layer of tomato sauce on the bottom of the 9x13-inch pan.
- Scatter half the cauliflower over the sauce.
- Sprinkle with 3 cups of grated Parmesan cheese and top with mozzarella pieces.
- Repeat layering until you end with a layer of sauce and Parmesan cheese on top.
- Bake in the preheated oven for about 40 minutes or until golden brown.
Tips:
- Even Frying: Ensure the cauliflower pieces are cut evenly to fry uniformly.
- Oil Temperature: To avoid greasy cauliflower, make sure the oil is hot enough before frying. Test with a small piece first.
- Layering: Distribute the sauce and cheese evenly for a consistent flavor throughout the dish.
Tricks:
- Breadcrumbs: Use panko breadcrumbs for an extra crunchy texture.
- Extra Flavor: Add Italian seasoning or garlic powder to the breadcrumbs for added flavor.
- Cheese Blend: Mix different types of cheese like provolone or Romano with Parmesan for a unique taste.
Advice:
- Healthier Option: For a lighter version, bake the breaded cauliflower instead of frying. Spray with cooking spray and bake at 425°F until crispy.
- Make Ahead: This dish can be assembled a day in advance. Store in the fridge and bake when ready to serve.
- Leftovers: Reheat leftovers in the oven at 350°F to retain crispiness.
Suggestions:
- Serving Ideas: Serve with a side of spaghetti or a simple green salad for a complete meal.
- Pairings: Pairs well with a crisp white wine like Sauvignon Blanc or a light red like Pinot Noir.
- Variations: Try using broccoli instead of cauliflower for a different twist.
